Truing the wheel can be the more daunting task but it's simple enough if you work slowly and methodically. Spin the wheel in your truing stand or frame and see where the rim is out of true.
Correct tension and truing are essential. Both determine the wheel's strength and durability. You should have the wheels and spokes trued and tensioned about once a year (if your ride often). Bicycle spoke rings can be plucked just like any other stringed instrument such as a guitar or a harp.
A bicycle wheel that is properly round and that doesn't wobble from side to side is said to be 'true'. If it's a circle, without high spots or low spots, it's concentrically true. If it the rim doesn't move to one side or the other when you spin it, it's laterally true.
Pro mechanics remove a bent wheel from the bike and put it on a special truing stand, but this is not needed unless you want to get a racing bike in tip-top shape. For a regular bike, you can true it quite nicely without even removing your wheel from your bike.

An optimized tire-rim combo at 36-50mm deep can be more stable than shallow and narrow box section with wide tire. But 80mm deep is just too much to be solve by rim shape.

They just may have more/less runout than circ*mstances require. A wheel on a beater bike can be considered "true" so long as it's not rubbing. A wheel on a racing bike is not true if there is any measurable runout. One to two millimetres side movement is acceptable.
